A classic warming Sausage stew with chunks of Potato in a rich Onion gravy

Ingredients

  • 8 Quality Gluten Free Pork Sausages
  • 1 Large Onion
  • 3 Large White Potatoes
  • 50g Unsalted Butter
  • 2 Tablespoons Sunflower Oil
  • 1 Pint of Vegetable Stock
  • 1 Tablespoon Gluten Free Plain Flour
  • 2 Teaspoons Mustard Powder
  • 2 Teaspoons Onion Powder
  • Salt and pepper to taste

Instructions

Peel and cut potatoes into 1cm cubes and place in a saucepan of water and bring to the boil. We only want to part boil these, so only cook for 5 minutes

Next, heat 1 tablespoon of oil in a frying pan over a medium heat and fry sausages until golden brown. You can do this in the oven also, or under a grill

Place a large heavy bottom saucepan on a medium high heat and add 1 tablespoon of oil

Fry onions for a few minutes until they turn translucent

Add 50g of butter and continue to fry until golden in colour

Add 1 tablespoon of gluten free plain flour and stir into mixture, you will notice it might start to stick the bottom of the pan, keep it moving for a minute as best you can (this will cook out the flour flavour)

Slowly add some of the stock, this will cause the flour to turn more into a paste

Continue adding the stock until it’s all fully combined

Add the onion powder and mustard powder to the mix and cook for 5 minutes. If mixture seems too thick, add a little water

Next add the sausages and the part boiled potatoes, cover the pot, reduce to a low setting and continue to cook for 30-40 minutes

Add salt and pepper to taste

You can add more vegetables if you want, it’s great with chunks of carrot, broad beans and peas

Notes

Serve with chunks of fresh French Bread, this is perfect for soaking up the gravy! As a great alternative you can use chicken instead of sausages, and use a chicken stock and sweetcorn!!
