A moist, succulent and lightly spiced cake with a warming cinnamon, apple and raisin tasteĀ 

Ingredients

  • 250g Unsalted Butter
  • 250g Caster Sugar
  • 250g Gluten Free Self Raising Flour
  • 4 Large Eggs
  • 3 Large Cooking Apples (peeled and grated)
  • 200g Currant
  • 2 Teaspoons Ground Cinnamon
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Vanilla Extract
  • 2 Tablespoons Brown Sugar

Instructions

Pre-heat oven at 180c fan

Cream unsalted butter and sugar in a large mixing bowl

Add eggs 1 at a time until mixed

Add Gluten free plain flour, baking powder, vanilla extract and ground cinnamon and thoroughly mix

Add peeled and grated Apple and the raisins and combine completely (add 2 tablespoons of rum at this point for a more adult flavour!)

Pour contents in to a greased/buttered 12x8 deep dish tray

Sprinkle top of cake with 2 tablespoons of brown sugar

Place in the middle of oven for 25-30 minutes until bouncy/firm and browned on top

Remove from oven and set aside to fully cool

Tastes great with fresh pouring cream on top, or ice cream!

Notes

Why not add a a few tablespoons of Rum to the mixture for a more adult flavour!
