A wonderful British Classic, Bread Pudding has always been one of my favourites and is a great way to use up old stale bread!
Bread pudding always reminds me of my Nan, she made wonderful Bread Pudding, and this is a close as I’ve ever come to recreating her recipe. It does taste so good, I like to add a little extra cinnamon to my mixture for that deeper
Bread Pudding
A wonderful British Classic, Bread Pudding has always been one of my favourites and is a great way to use up old stale bread!
Ingredients
- 500g White Bread
- 500g Mixed Dried Fruit
- 85g Mixed Peel
- 2 Teaspoons Mixed Spice
- 1/2 Teaspoon of Cinnamon
- 600ml Milk
- 2 Large Eggs
- 150g Light Muscovado Sugar
- Zest of 1 Lemon
- 100g Unsalted Butter (melted)
- 2 Tablespoons Demerara Sugar
- 1 Tea bag (Either Earl Grey or Lady Grey)
- 1 Pint of Boiling Water
Instructions
Pour 1 pint of boiling water in a large glass bowl and add the tea bag (I prefer to use Lady Grey as it has a nice sweet and delicate taste to it). Leave bag to steep in water for at least 10 minutes
After 10 minutes remove teabag and add the dried fruit and leave for an hour to soak
Cut bread in to small pieces and add to a large mixing bowl
Pour in milk and mix together by hand to fully combine the bread and milk mix (Using your hands not only ensures its mixes thoroughly, but feels good too!!)
Leave mix for the remaining time as the dried fruit
After an hour fully drain the fruit and add to the bread and milk mix, together with the mixed peel, mixed spice, cinnamon, lemon zest, melted butter, sugar and 2 large eggs (beaten)
Once again using your hand, thoroughly combine the mixture
Pour contents in to a 12x8 deep dish tray
Sprinkle on the demerara sugar on top
Place in to a pre-heated oven at 160c fan for 1 hour 30 minutes
Once fully cooked and golden brown, remove from oven and leave to completely cool
Cut in to large chunks and ENJOY!!
