These crumbly oat cookies with chocolate chips, raisins and hazelnuts are perfect for dunking!
Gluten Free Chocolate Chip, Raisin, Nuts and Oat Cookies
Crumbling oat cookies with chocolate chips, raisins and hazelnuts
Ingredients
- 500g Gluten Free Oats
- 250g Soft Brown Sugar
- 100g Caster Sugar
- 100g Plain Gluten Free Flour
- 350g Unsalted Butter
- 150g Golden Syrup
- 2 large eggs
- 250g Hazelnuts
- 250g Raisins
- 250g Chocolate Chips
- 1 teaspoon Salt
- 1 teaspoon Baking Powder
- 1 teaspoon Vanilla Extract
Instructions
Preheat he oven to 180°c fan
Place the hazelnuts on a baking tray and cook for 5-10 minutes until they turn a darker brown colour
Set hazelnuts to one side to cool. Once cooled, use the end of a rolling pin to slightly crush them to bit size nibs
Place a saucepan over a medium heat and drop in your butter and golden syrup
Once melted add to a large mixing bowl and beat in both the brown sugar and caster sugar
Crack in both eggs and mix thoroughly
Now add in the flour, salt, baking powder and vanilla extract and mix together, mixture might seem loose but don't worry
Now add the oats, raisins, chocolate chips and hazelnuts and combine into a dough like consistency
Take a golf ball sized piece of the dough and roll it in your hand to create a ball, place on a baking sheet, then use the back of a warmed spoon to flatten the dough into a cookie
Place in the oven for 10-12 minutes or until the have turned a golden brown colour
Leave on baking sheet for 5 minutes, then transfer to a cooling rack.
These can be eaten as they are, or dipped in chocolate if you're feeling a bit naughty!
