Burger Relish

A wonderfully tangy tomato relish, perfect for burgers and hotdogs!

Shop bought sauces and relishes are good, but sometimes they can be a bit sweet. This recipe is not the simplest or quickest, but you do control what goes into it. You want more tomato flavour, or prefer your more smokey, or hotter with chilli, its down to you.

But here is the general recipe, feel free to change it up as you feel fit!

A wonderfully tangy tomato relish, perfect for burgers and hotdogs!

Ingredients

  • 1kg of Fresh Tomatoes
  • 200g Soft Brown Sugar
  • 100g Tomato Puree
  • 1 Large Onion
  • 2 Green Chillis
  • 3 Garlic Cloves
  • 50ml Soy Sauce
  • 25ml Balsamic Vinegar
  • 100ml White Wine Vinegar
  • 3 Tablespoon Worchester Sauce
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Mustard Seeds
  • 1 Teaspoon Cayenne Pepper
  • 1 Teaspoon Chilli Powder (hot or mild, your taste!)
  • 1 Teaspoon Onion Granules
  • 1 Teaspoon Smoked Paprika
  • 1 Teaspoon Mustard Powder
  • 1 Teaspoon White Pepper
  • 1 Teaspoon Salt

Instructions

Chop Tomatoes in to quarters and set to one side

Finely dice onion and also set aside

Heat a large heavy bottom saucepan on medium heat

Add 2 Tablespoons of Olive Oil and fry off the onion for 1 minute

Next add the Garlic (crushed or finely chopped) and the tomatoes, cook for a further 7-10 minutes until they start to break down

Now finely chop your chilli (if you want a fiery heat, leave in the seeds) and add to the pot

Using a stick blender, blend the contents until smooth and thick and there are no lumps of tomato left

Next add the Brown sugar, Tomato Puree, Soy Sauce, Balsamic Vinegar, Worchester Sauce, Cayenne Pepper, Chilli Powder, Onion Granules, Smoked Paprika, Mustard Powder, Salt and Pepper and give it all a good stir

After 5 minutes on a medium heat, turn heat to low, add the White Wine Vinegar and Mustard Seeds and cook until liquid has reduced by half (this can take up to 3-4 hours, but keep an eye on it, make sure it does not burn)

Have a taste and check seasoning, if it needs to be a bit sweeter you can add another Teaspoon of sugar, if it needs more kick add some more more Chilli, salt and pepper, if it needs more tomato then add some more puree.

Place into sterilised bottles and refrigerate, will keep up to 6 months unopened, or 3-4 week once opened

Shake well before use!
