Banana Walnut Bread

This Banana Walnut bread tastes great cold or warm or with a nice layer of real butter!

Ingredients

  • 250g Golden Caster Sugar
  • 300g Self Raising Gluten Free Flour
  • 250g Stork
  • 4 Large Eggs
  • 2 Large Bananas
  • 250g Chopped Walnuts
  • 1 Teaspoon Baking Powder
  • 1 Teapsoon Vanilla Extract
  • 1 Teaspoon Ground Cinnamon
  • 1 Tablespoon Golden Caster to sprinkle on top

Instructions

Preheat oven to 180°c Fan

Place the Stork and sugar in a large mixing bowl and cream together with an electric mixer

Add you eggs 1 at a time and mix together (the mixture can sometimes seem as if its splitting, don't worry about it, it will all work out!)

Sieve in the flour and baking powder

In a separate bowl, unpeel the bananas and mash with a fork

Next add this to your mixture with the vanilla extract and ground cinnamon

Now add the chopped walnuts and fully combine with a wooden spoon

Place the mixture in a greased and lined loaf tin

Sprinkle the top with 1 tablespoon of golden caster sugar

Place in the centre of the preheated oven for 35-45 minutes, or until a sewer comes out clean

Once cooked, remove from oven and set aside until cooled

Cut into large slices and enjoy on their own, or with a nice thick layer of real butter!

Notes

Cooking time may vary depending on the size of your loaf tin
