A light Asian inspired soup with crunchy vegetables and wholesome soba noodles

 

Chinese inspired Broth with Soba Noddles

Ingredients

  • 40g Miso Paste
  • 100g Soba Noodles
  • 50g Bamboo shoots - sliced thinly
  • 50g Beansprouts
  • 50g Carrot - sliced thinly
  • 1 Red chilli - sliced thinly

Instructions

Pour 1 pint of boiling water in to a saucepan and add the miso paste, stir together on a gentle simmer

Add the carrot, bamboo shoots and beansprouts to the broth and cook for 2 minutes

Add the soba noodles to the broth and cook for another 3-4 minutes until the noodles are soft

Ladle out in to bowls and dress with a sprinkle of the thinly sliced chilli

Notes

This also works if you want to add some pre-cooked chicken too, just add it the same time as the vegetables
