Gluten Free Oat Raisin Biscuits

These chewy oat cookies with raisins are perfect with a cup of tea!

Ingredients

  • 500g Gluten Free Oats
  • 250g Soft Brown Sugar
  • 100g Caster Sugar
  • 100g Plain Gluten Free Flour
  • 350g Unsalted Butter
  • 150g Golden Syrup
  • 2 large eggs
  • 250g Raisins
  • 1 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Extract

Instructions

Preheat he oven to 180°c fan

Place a saucepan over a medium heat and drop in your butter and golden syrup

Once melted add to a large mixing bowl and beat in both the brown sugar and caster sugar

Crack in both eggs and mix thoroughly

Now add in the flour, salt, baking powder and vanilla extract and mix together, mixture might seem loose but don't worry

Now add the oats and raisins and combine into a dough like consistency

Take a golf ball sized piece of the dough and roll it in your hand to create a ball, place on a baking sheet, then use the back of a warmed spoon to flatten the dough into a cookie

Place in the oven for 10-12 minutes or until the have turned a golden brown colour

Leave on baking sheet for 5 minutes, then transfer to a cooling rack.

These can be eaten as they are, or dipped in chocolate if you're feeling a bit naughty!
