These chewy chocolate chip cookies are perfect, and so easy to make!
Ingredients
- 300 grams plain flour
- 150 grams soft unsalted butter
- 100 grams soft light brown sugar
- 125 grams caster sugar
- 2 teaspoons vanilla extract
- 2 medium eggs
- ½ teaspoon bicarbonate of soda
- ½ teaspoon salt
- 250g semi sweet chocolate chips
Instructions
Preheat he oven to 170°c fan
Place a saucepan over a medium heat and drop in your butter and let it melt slowly
Once melted add to a large mixing bowl and beat in both the brown sugar and caster sugar, leave mixture for a few minutes for the butter to cool down before adding the eggs
Crack in both eggs and mix thoroughly
Now add in the flour, salt, bicarbonate of soda, chocolate chips and vanilla extract and combine into a dough like consistency
Place in the fridge for 1 hour before using
Take a golf ball sized piece of the dough (you can use an ice cream scoop for this) and roll it in your hand to create a ball, place on a baking sheet, then use the back of a warmed spoon to flatten the dough into a cookie
Place in the oven for 12-15 minutes or until the have turned a golden brown colour
Leave on baking sheet for 5 minutes, then transfer to a cooling rack.
