A chocolatey treat that is welcome any time of the year! Who does’t love a Rocky Road
I have tried many types of Rocky Road, from the classic style to a more robust and packed bar. I like extras in mine, but not too many, and the addition of Toffee Popcorn makes this one special (just reminder to remove any unpeopled kernels!)
Rocky Road
A chocolatey treat that is welcome any time of the year! Who does't love a Rocky Road
Ingredients
- 100g of Quality Dark Chocolate
- 100g of Milk Chocolate
- 100g of Condensed milk
- 35 of Unsalted Butter
- 25g of Cocoa Powder
- 100g of Nice-style Biscuits, slightly crushed
- 150g of Toffee Popcorn
- 150 of mini marshmallows
- Zest of 1 Lemon
Instructions
Place the Butter and condensed milk in to a heavy bottom saucepan and gently heat until butter is melted
Stir the butter and condensed milk until fully mixed
Sieve in cocoa powder (making sure there are no lumps)
Add both chocolates and stir until chocolate is fully melted and combined
Add in the slightly crushed Nice Biscuits, Mini Marshmallows and Toffee Popcorn and thoroughly combine
Pour contents in to a 12x8 deep-dish tray lined with baking parchment/greaseproof paper
Using the back of a large metal spoon (or if you're brave you can use your hands, but wear nitrile gloves to stop them getting sticky) push the mixture hard in to the tray, getting out as much air and filling every gap
Place in the fridge for 3-4 hours until fully set
Turn out the slab on to a large cutting board, and using a sharpe knife cut in to large chunks

Notes
You can dust the top of the these with icing sugar, or if you want even MORE chocolate make a chocolate ganache and pour over the top and leave to set too
