Some Flapjacks are thick, hard and crunchy, this one is soft and gooey and SO moreish!!

Ingredients

  • 250g Unsalted Butter
  • 225g Golden Caster Sugar
  • 100g Golden Syrup
  • 300g Rolled Oats
  • 100g Currants

Instructions

Preheat oven to 160c Fan

Place butter, sugar and golden syrup in a large heavy bottom saucepan and bring to a medium/high heat

When butter has melted and sugar has dissolved (test by running the back of a wooden spoon along the bottom of the pan to see if you have feel and grains of sugar left) pour the oats and currants in and thoroughly mix together making sure every little piece of oats is coated in the sugary mixture

Place in to a pre-greased 12x8 deep-dish tray and press the mixture down in to the corner and making sure there are no air pockets.

Place in the centre of the oven for 15-20 minutes, until the top is golden brown and edges are slightly bubbling

Once cooked, remove and place on a cooling rack for 12-20 minutes, then to the fridge for a couple of hours

Once fully cooled it should be easy enough to turn out on to a chopping board, cut in to large slabs
