A variation on my favourite Banana Walnut bread, with the addition of Chococlate!
Ingredients
- 250g Golden Caster Sugar
- 300g Self Raising Gluten Free Flour
- 250g Stork
- 4 Large Eggs
- 2 Large Bananas
- 250g Chopped Walnuts
- 250g Semi Sweet chocolate chips
- 1 Teaspoon Baking Powder
- 1 Teapsoon Vanilla Extract
- 1 Teaspoon Ground Cinnamon
- 1 Tablespoon Golden Caster to sprinkle on top
Instructions
Preheat oven to 180°c Fan
Place the Stork and sugar in a large mixing bowl and cream together with an electric mixer
Add you eggs 1 at a time and mix together (the mixture can sometimes seem as if its splitting, don't worry about it, it will all work out!)
Sieve in the flour and baking powder
In a separate bowl, unpeel the bananas and mash with a fork
Next add this to your mixture with the vanilla extract and ground cinnamon
Now add the chopped walnuts and chocolate chips, and fully combine with a wooden spoon
Place the mixture in a greased and lined loaf tin
Sprinkle the top with 1 tablespoon of golden caster sugar
Place in the centre of the preheated oven for 35-45 minutes, or until a sewer comes out clean
Once cooked, remove from oven and set aside until cooled
Cut into large slices and enjoy on their own, or with a nice thick layer of real butter!

Cooking time may vary depending on the size of your loaf tin
